What is Longganisa?

The term longganisa is derived from the Spanish term “longaniza” which is a type of Spanish sausage. With the Spanish occupation of the Philippines, the term was introduced into the language and is now the generic word for most local sausages in the Philippines.

There are some regions in the Philippines that refer to local sausages as “chorizo,” but unlike in Spain, where the two sausages have distinctions, it seems to be used interchangeably in the Philippines, depending on the region where one is staying. 

Longganisa is so popular and integral in many regions of the Philippines. This is why several places in the country, from Vigan to Guinobatan to Lucban, hold yearly longganisa festivals to celebrate and promote it.

Longganisa counts as an all-day food. In local parlance, it is an “altanghap” food, meaning it can be enjoyed for breakfast (almusal), lunch (tanghalian) or dinner (hapunan). 

Despite this, longganisa is still one of the kings of the Filipino breakfast. The best way to enjoy it is to pair the longganisa with garlic fried rice (sinangag) and fried egg (itlog). When ordering in a restaurant or eatery, it is simply called “Longsilog.”

Because they are rich and savory, longganisa is best enjoyed with a side dish or condiment to cut into the richness. Most of the time, longganisa is dipped in vinegar or eaten with pickled vegetables or fruits called “atchara.”

Longganisa has crossover appeal. In fact, it has appeared on the menu of several American food joints in the Philippines, including fast-food giant McDonald’s.

Most longganisas are named after the region they were created or became popular in, making it easy to know where they are readily available.

Most types of longganisa fall into two general categories, “de recado” and “hamonado.” De recado refers to a more savory, salty kind of sausage, while hamonado refers to a sweeter sausage. 

While there are many different varieties of longganisa, the common denominator is garlic. Very rarely is there a Filipino sausage made without copious amounts of minced garlic.

Tuguegarao Longganisa

Usually yellowish or orange in color, Tuguegarao longganisa has a wonderfully vibrant note of sourness from the vinegar marinade. The meat is also less finely ground, so there are larger pieces in the sausage.

It is sometimes known as Longganisa Ibanag/Ybanag. Don't forget to try or buy these if you're doing Tuguegarao tours . 

Alaminos Longganisa

This longganisa from Alaminos in Pangasinan  is easily identifiable as each link of the sausage is sealed with a toothpick. Each link is usually small, and the meat is flavored simply with salt, pepper, and tinted with annatto seed oil/water to give it an orange hue.

In most cases, the meat is ground once, seasoned, and then ground again before going into the casing. These are a must-try or must-buy as souvenirs to complete your Pangasinan tours .

Lucban Longganisa

Lucban longganisa in Quezon province distinguishes itself by flavoring the meat with oregano and sometimes paprika. Of course, it still has a strong flavor of garlic and vinegar, but they do have a deeper flavor, which slightly reminds of European flavors.

Sometimes referred to as the “Garlic Longganisa,” Bulacan's Calumpit longganisa actually features a more well-rounded flavor profile compared to the other sausages with hints of paprika and brown sugar complementing the garlic, salt, and pepper. 

Cabanatuan Longganisa

The happy exception to the rule, Nueva Ecija's Cabanatuan longganisa, locally known as “batutay,” are made with ground beef instead of the usual pork. It also has a sweeter taste, giving the sausage a great balance between savory and sweet.

Rivaled only by the Vigan longganisa in popularity, this longganisa from the Culinary Capital of the Philippines,  Pampanga , is sweet and usually tinted red.

This is the most commonly found version of longganisa, so when one is in Metro Manila , this is the default version usually available. It can come in two versions, in a sausage casing or “skinless.”

In the regions South of Luzon, from Cebu onwards in Visayas, people generally refer to longganisa as “chorizo.” The size and shape may vary depending on the region. Cebu versions, for example, may be rounder while Mindanao's  Davao versions may be a little longer. The taste, however, does not vary as much.

These are the hamonado variety of longganisa, sweet with hints of garlic. These are best enjoyed grilled over charcoal, with the casings caramelizing, giving the sausages a slight smoky taste and aroma. In Boracay , the chorizo meat is shaped into a patty, grilled and served in a burger bun.

While it is sometimes made with casing, it seems that the more popular version has become the chorizo “pudpud” which is ground sausage. It is quite common to see these chorizos sold in small glass bottles. 

Must-Try Local Longganisa 

These longganisa varieties may not be as popular, as they may be difficult to procure and are not usually available outside of the provinces they are made. These, however, are tremendously flavorful and delicious, and it will be worth the effort to find them. 

Imus Longganisa

Probably not as well known as some of its older brothers, Cavite's Imus variety has a blend of soy sauce, vinegar, annatto, and black pepper that gives the mostly lean pork and a great balance of salty and sour flavors.

It goes really well with nipa palm vinegar. Try to look for these in public markets during your Cavite tours .

Guinobatan Longganisa

This longganisa could be the nation’s smallest and a must-buy when doing tours in Bicol . Each link is only about 2 inches long, and the meat is chopped by hand instead of being ground by a machine. This process gives these sausages a different, more substantial mouthfeel. 

It is not strictly a longganisa, although there are some who like to call it “Longganisa Dugo” (blood longganisa). Pinuneg is a blood sausage from the Northern Cordillera region in the mountainous regions of Luzon , which uses offal like the heart, liver, or lungs and the pig’s blood.

Stuffed with lots of garlic and then smoked before being fried, the sausage is rich and savory, best enjoyed with some vinegar. 

Binalonan Longganisa

Another longganisa variety from the province of Pangasinan, this version may be lesser known than its cousin from Alaminos, but it is no less flavorful. The pork sausage is flavored with garlic and soy sauce, and it is encased in a sun-dried casing of pork intestine. 

Chinese Chorizo

Sometimes called Chorizong Macau, these are Filipino versions of the Cantonese Lap Cheong sausage. They are sweet pork sausages that are dried. In the Philippines, they are rarely eaten alone. They usually appear in a lot of fried rice or stir fry recipes.

BAGUIO CITY—This city’s longganisa (native sausage) is traditionally small, but it is big in history.

And one business establishment that has lived up to its name as the maker of the city’s well-loved, bite-sized breakfast fare is the Enriquez Baguio Longganisa, a family-run enterprise that started in a meat stall in the city market about 60 years ago.

The Enriquez Baguio Longganisa traces its history to the ’40s when Batangas-based couple Timoteo and Maria Dipasupil migrated to Baguio to establish a meat business.

The couple then established the Dipasupil Meat Store, a retail and wholesale outlet that sold pork and beef in the city. After World War II, the couple introduced other meat products that included longganisa.

Lily Enriquez Cruz, grandchild of the Dipasupil couple and one of the present owners of the Enriquez Baguio Longganisa, says her grandparents learned their longganisa recipe from a family friend in Baguio.

The couple perfected the recipes for the de recado (with garlic) and hamonado (sweet) varieties that became bestsellers among locals and tourists, who would buy them as their pasalubong (gifts).

“Longganisa is part of our heritage. It’s a traditional Filipino food. Filipinos look for it anywhere they go. It always takes the right ingredients to come up with the perfect taste,” Cruz says.

She says she and her siblings learned making longganisa from their mother, Asuncion Dipasupil Enriquez, who continued the business. Aside from native sausages, the family also produced chicharon (pork crackling), tocino, beef tapa and pork lard.

Cruz says their longganisa, which sells for P40 a dozen, was patronized even by celebrities. She mentions actor Nestor de Villa, bowler Paeng Nepumoceno and the late House Speaker Ramon Mitra Jr. as among their customers.

Ray Enriquez, Cruz’s brother and a co-owner of the Enriquez Baguio Longganisa, says their store has attracted loyal clients since the ’50s because the recipe for their top product has been perfected through kitchen tests.

Enriquez, 52, says he learned making longganisa when he was 19 years old. The recipe was passed on to him by his mother and he continued making and selling longganisa when their mother died in 1985.

“I have always been hands on… Of course, the family maintains our secret recipe,” he says.

In 2000, the family decided to change the business name to Enriquez Meat Store, to establish their longganisa’s identity while continuing the tradition of their elders’ Dipasupil Meat Store.

The store produces 60 kilograms of longganisa a day and supplies sausages to several hotels, inns and cafes in the city like the Hotel Elizabeth, Ridgewood Hotel, Hebrews Cafe, Baden Powell Inn, Ferionni Pension House, Everything Nice, Golden Pine Hotel, Iggy’s Inn and Pines View Hotel. It also supplies longganisa to the San Pablo Seminary.

Cruz says the period between the ’50s and ’70s was the peak of their longganisa business. She says the business has survived despite the competition from several meat shops in the city.

“Our longganisa stands out because we have always produced a quality product. We have established a name in the local market,” she says.

In 2009, the family-run business tried to expand by venturing into home-cooked meals that featured its longganisa. Their participation in Panagbenga’s (Baguio Flower Festival’s) Session Road in Bloom that year helped introduce the Enriquez brand of longganisa to residents and tourists alike.

Cruz says they have improved the recipe for their longganisa because they also wanted to cater to the health-conscious. “We reduced the fat in the longganisa because a lot of people are health conscious. But of course, the fat still has to be there. Longganisa is not longganisa without the fat,” she says.

This longganisa recipe is very simple and easy to make. With slightly sweet take and loaded with garlicky goodness. Normally encased in a casing but can also be made skinless.

What is longganisa?

Longanisa/longganisa is a Filipino local sausage or chorizo. It is commonly served for breakfast with fried rice and a fried egg, the trio is known as ' longsilog' .

A derivative of the Spanish sausage, longaniza,  the local Filipino longganisa has many different kinds. These variants are known after the name of the town or province where it comes from. Basically, they are grouped into two categories, the sweet longganisa (hamonado) and the garlicky/sour/salty ones (derecado).

Recipe for Longganisa Hamonado

It was a bit ironic, that it was while I was in Germany, where sausages abound, that I learned how to make my own longganisa. I guess you can put it down to homesickness! While there were so many good sausages I can choose from, I can't help but pine for our own version. Specifically the ones I grew up with in Pampanga, Longganisa Hamonada. They are the most widely-known variety because they are commercially produced on a large scale.  I also like the garlicky kind, especially the ones from Cabanatuan and Vigan. So I figured I would combine the two in this recipe.

By the way, I would like to note that this Longganisa recipe is not as sweet as some commercially bought longganisa and has a lot of garlic. You may adjust both to your preference.

Ingredients for making Longganisa

Making longganisa is really simple. You just mix the ingredients and put them on a casing. If you can not find casing, then make it skinless longganisa . Next, you let them dry our and cure for at least a day.

The ingredients vary from one recipe to the other. The most basic ingredients are ground pork/beef, brown sugar, salt, vinegar, ground pepper, and garlic. You can also add other spices like paprika or achuete powder, soy sauce, anise liqueur, oregano.

Ground Pork. It is important to add some fat whenever you make sausages. First, it adds flavor, and second, it will prevent the sausage from drying out.  The normal ratio is 70% lean to 30% fat. You can go lower like 80/20 but you cannot completely omit it. You can also use other meat like chicken and beef.

Hog Casing. This is what is normally used to encase longganisa as they are natural and edible. You can get them dry or fresh. In Germany, you can the butcher shop or Metzgerei  if they can give you some. They will be fresh and soaked in saline solution. You need to rinse them several times to rid of the salt and the smell. In the Philippines, I got the dried hog casing from an online shop. They are ready to use but I soaked them a bit to make them more pliable.

Ascorbic Acid . Or commonly known as Vitamin C. This is not a must but adding it to meat will slow oxidation and preserve color and freshness during the storage.  You can use the ascorbic acid tablets and crush them to make a powder to be dissolved in cold water.

The way we Kapampangans normally cook Longganisa (encased in a sausage casing) is we boil them first in little water. Use a skillet over medium heat. No need to emerge them in water, add just enough to reach about a quarter high of the longganisa.

Cover the skillet or pan with the lid and let it simmer until water is almost gone. You may need to poke some holes on the sausages or they will burst. Some of the fats would have turned to oil.

Remove the lid and add more cooking oil if needed. Cook the longganisa, turning from time to time until both sides are browned and sugar from inside has caramelized.

Homemade Longanisa Pampanga

Ingredients   1x 2x 3x

  • 1 kilogram ground pork - 20%-30% fat
  • ½ cup brown sugar - or more
  • 1 head garlic - finely chopped
  • 1 tablespoon soy sauce
  • 1000 mg Ascorbic Acid - crushed and dissolved in 1 Tbsp cold water
  • 1 tablespoon salt
  • 3 tablespoons coconut vinegar
  • 1 teaspoon ground pepper
  • 1 tablespoon paprika powder -optional
  • sausage casing (or wax paper for skinless)

Instructions  

  • Put all the ingredients in a bowl, except for the casing, and mix well until fully combined. Cover bowl with a plastic wrap or transfer into a container with a cover. Let it marinate in the fridge for at least an hour.
  • Close one end of a sausage casing with a knot or tie it with a thin rope or a cooking twine. Fill the sausage casing with the meat mixture. Use a funnel if you have one. Insert the nozzle of the funnel through the open end of the casing all the way to the closed end. Scoop the meat mixture, into the funnel and gently pack into the casing. Once filled tie a knot to enclose. To create the links tie a rope or twine around it at every about 2-3 inches interval.
  • Once in the casing, place them in a tray and put in the fridge for a day or two to dry out. Pack them in zip locks or cantainer with lid and can be refrigerated for several days. You can also freeze them for longer storage time.
  • To cook, place sausages (uncut) in a skillet. Using a toothpick, prick a hole or two on each sausage then add some water just enough to reach about halfway up the sausages and cook in medium heat. Let it simmer until water is goned.
  • Usually, there is no need to add oil since it will have enough from the fats from the sausages itself but add some if needed. Cook until browned and sugar has caramelized.
  • Transfer to a serving plate and serve with rice.

This is not Filipino sausage, it is Spanish, more accurately Portuguese.

And most people make the mistake of saying that chorizo is Spanish, and it too is Portuguese.

Please correct this with the accurate information, thanks.

Hi Paul, we have been to different parts of Spain and Portugal several times and have tried a lot of different sausages on both places but we have not yet encountered this kind (sweet), not even in other countries. So it will be unfair to Portugal to say this is a Portuguese sausage when they do not have it. Oh, and I would be very careful in saying that Portuguese is Spanish, Portuguese people do not like that at all.

Hi there. Can I substitute apple Cider vinegar for coconut vinegar? I don’t have sausage stuffer/ syringe and I like that you suggested using a funnel instead. I’m thinking of using my icing syringe as well. Not sure though if it will work. Thank you for the recipe!

Yes, you can use any vinegar but you might need to adjust as apple cider is a bit more sour.

How to Make Skinless Longganisa (Meat Processing)

Skinless longganisa is a kind of sausage made of seasoned ground meat without casings. Making longganisa is not a new business idea but perfecting its taste to attract large customers is a difficult trick. Every longganisa recipe has its own version which sometimes is very expensive. Here’s another way to make longganisa of good quality.

Skinless Longganisa

Ingredients:

3 kilos lean pork 1 kilo pork back 4 teaspoons phosphate 1 cup water 5 tablespoons rock salt 2 teaspoons curing salt 2 1/4 cups white sugar 1/4 cup ground pepper 1/2 cup crushed garlic 1/2 cup anisado wine 1/2 cup pineapple juice Food color (allura red)**, optional

**Prepared by dissolving 1 teaspoon of food color in ¼ cup of water.

Packaging materials

Polyethylene bags Size for ¼ kg : 4” x 8” with a thickness of 0.003

Size for ½ kg : 6” x 10” with a thickness of 0.003

1. Grind the lean meat and back fat. Set aside in the refrigerator.

2. Dissolve phosphate in water.

3. Mix together rock salt, curing salt and phosphate solution. Add to the ground meat and blend until slightly “sticky.”

4. Add the remaining six ingredients. Mix well.

5. Cure at room temperature for 8 to 10 hours or at refrigerator for 1 to 2 days.

6. Place 2 tablespoons of the meat mixture in paperlyne or cut wrap (about 6 inch x 6 inch squares). Roll up and tuck in edges.

7. Pack 2 in polyethylene bags. Freeze until needed.

Skinless longganisa is a sweet and savory sausage served as the main dish for a hearty Filipino breakfast.

Welcome back to our second recipe of the Filipino breakfast series, and today we’re making a classic savory and sweet Filipino sausage!

Filipino longganisa with garlic fried rice (sinangag), tomatoes, cucumber, and atchara.

What is Longganisa?

Longganisa refers to a variety of Philippine sausages that are typically cured, smoked, and seasoned with spices.

Like with most Filipino food, there may be hundreds of variants of this dish due to the widespread of regions that exist in the Philippines. Some areas may make theirs with chicken, beef, or even tuna. Other variants may also taste slightly more sweet, savory, or garlicky in taste.

This recipe is a (somewhat) easier version than the traditional longganisa since we’re not casing the meat filling at all!

“Longsilog” is a portmanteau for the words “longganisa” (Filipino sausage), “ sinangag ” (garlic fried rice), and “itlog” (egg). It’s a classic Filipino breakfast that’s composed of garlic rice, a fried egg and some sort of protein.

Tangy side dishes, such as fresh tomatoes,  atchara  (pickled papaya), or  mango ensalada  (Filipino mango salad) may also be served with the dish to lend some brightness to the overall meal.

In the Philippines, you can find a variety of “silog” meals that exist, each varying in terms of the protein served alongside the rice.

Instructions for longganisa

  • Combine all the ingredients together for the longganisa.

  • Shape the meat mixture into sausages, worth about 1/4 cup each. Let the sausages refrigerate for at least 1 hour to overnight to firm up and to let their flavors develop.

To cook, pour in just enough water to cover the longganisa, then let it boil over medium-high until all the liquid has evaporated.

Once all the water has evaporated, continue cooking the longganisa in its rendered fat until slightly caramelized on the outside, frequently turning to avoid burning (if not much fat has rendered, you may add ~1 tbsp of oil).

Note: Cooking with water is a more traditional method to cook the longganisa. Other methods you can experiment with could be simply pan-frying the sausages with some oil until cooked all the way through, smashing the meat until flattened into a patty , or even crumbling the longganisa and stir-frying.

Serve the longsilog-style with  sinangag  (garlic fried rice), a fried egg, and fresh tomatoes and cucumbers on the side. Enjoy!

How long can I store longganisa?

Longganisa can be refrigerated for up to 3 days . If freezing, be sure to store them in an airtight container or in a vacuum-sealed bag. Frozen longganisa can last for up to 4 months .

Can I customize my longganisa?

100% yes. Feel free to add more minced garlic if you prefer to intensify the garlic flavor. You may also add more brown sugar if you like your longganisa more on the sweet side. Other variations include using different types of protein (e.g., mixes of beef or chicken), or adding extra spices (e.g., oregano, or star anise).

Is the achuete powder necessary?

Achuete is not necessary, especially if you’re having difficulty finding this ingredient. While the achuete powder does add a mild earthy, peppery flavor to the longganisa, its main use is for coloring and can be omitted without altering the flavor too much.

1 tbsp paprika

My husband and I live in a country where it’s difficult to find frozen longganisa so I made this recipe and we both loved it! I only cooked a few then froze the rest so I can pull them out in batches for weekday breakfast but I definitely should have doubled the batch because I foresee us going through these quickly lol

Sony and Apollo’s Plan for Paramount: Break It Up

CBS and other well-known properties would be sold if Sony and Apollo were able to buy Paramount. But the new owners would keep the movie studio.

Shari Redstone helped build Paramount Global into a media empire, but if Sony Pictures Entertainment and the private-equity giant Apollo Global Management succeed in acquiring it, they plan to break it all up, according to three people familiar with the matter.

The plan would include auctioning off CBS, cable channels like MTV and the Paramount Plus streaming service, said the people, who asked not to be identified sharing private details. Paramount Pictures — home to blockbusters like “The Godfather,” “Top Gun” and the “Mission: Impossible” franchise — would be combined with Sony’s business.

Sony and Apollo, which made a nonbinding expression of interest in acquiring Paramount for $26 billion last week, are also likely to keep Paramount’s library of films and TV shows and the rights to well-known characters, including the Teenage Mutant Ninja Turtles and SpongeBob SquarePants. They have not yet outlined this plan to Paramount or its advisers.

A breakup of Paramount would represent a major changing of the guard in the entertainment industry. CBS and Paramount have been controlled by the Redstone family for decades, since the media mogul Sumner Redstone assembled the conglomerate in a series of audacious deals. His daughter, Ms. Redstone, championed a 2019 deal to reunite it, and she remains Paramount’s controlling shareholder.

Sony and Apollo are now engaging with Paramount’s financial advisers on next steps in their proposal, the people said. The two companies have not yet signed formal nondisclosure agreements or begun due diligence reviews, a process that could take weeks.

Though it’s still early, the two bidders have already begun to envision how a deal for Paramount could unfold. The two would likely operate the company as a joint venture controlled by Sony, with a minority stake owned by Apollo, the people said. Sony would look to combine the marketing and distribution functions of the Paramount movie studio with its own operations, and divest the rest of the properties.

Over time, Apollo could sell its stake in the joint venture back to Sony or to another buyer. It’s not yet clear just how large a stake Apollo would hold in the business, though the company plans to invest billions in the deal, one person said.

A breakup of Paramount is not a preferred outcome for Ms. Redstone, who would prefer the company to pass on to another buyer intact, a person familiar with her thinking said. But it wouldn’t necessarily be a dealbreaker if the offer was compelling, the person said.

There are other suitors. Skydance, a media company founded by the tech scion David Ellison, has been in discussions with Paramount for months about a potential deal. Exclusive negotiations between Skydance and Paramount lapsed last week, shortly after Sony and Apollo put in their expression of interest. But Skydance remains interested.

Sony and Paramount have different approaches to the entertainment business, and a deal would probably result in a U-turn for Paramount. Unlike Paramount, which streams its content on Paramount+, Sony licenses its movies and TV shows to companies like Netflix and Disney. Sony would probably not change that approach in a deal with Paramount and would most likely look to combine Paramount+ with a rival service, such as Comcast’s Peacock or Warner Bros. Discovery’s Max.

Sony has long pursued Paramount’s movie studio. Several years ago, Sony executives reached out to Paramount to see if the company would be willing to sell Paramount Pictures or merge it into a joint venture, but Paramount signaled it was interested only in a deal for the whole company. So when Apollo made a bid for all of Paramount this year, Sony decided to team up.

Any deal by Sony would face regulatory hurdles. Regulations restrict foreign owners from holding licenses for U.S. broadcast stations, which could prevent Sony — which is owned by the Japanese-based Sony Group — from owning CBS-affiliated TV stations. But they could divest the stations immediately, or have Apollo apply for the license. They are also considering other options for the stations.

The deal would also most likely require clearance from the Committee on Foreign Investment in the United States, the panel in Washington that scrutinizes acquisitions by foreign owners.

Sony and Apollo believe that when they decide to sell the Paramount assets , there could be many logical buyers, the three sources said. Warner Bros. Discovery, which does not own a broadcast network, could be a suitor for CBS. TV station groups like Nexstar and Tegna could be logical buyers for CBS’s owned and operated TV stations.

The hardest asset to sell would most likely be Paramount’s cable networks, like MTV and Nickelodeon, but those could be sold to a TV programmer looking for greater scale in negotiations with cable companies like Charter and Comcast.

New chicago-based company global tetrahedron wants to make the onion great again, reporting by amy yee.

Heard this one before? A tech CEO, a disinformation reporter and two social media experts enter a Zoom call. It might sound like the start of a joke, but that’s how four near-strangers bought the Chicago-based satire website The Onion.

Meet Global Tetrahedron : The owners formed a new Chicago-based company, called Global Tetrahedron, and bought The Onion last month from G/O Media for an undisclosed sum. Global Tetrahedron is a fictional company that grew into a “multinational behemoth” in The Onion’s 1999 book “Our Dumb Century.”

Midwestern roots : The humor website, self-described as “America’s Finest News Source,” was founded in 1988 by two University of Wisconsin-Madison students, initially as a print publication. The paper moved to New York City in 2000, then relocated to Chicago in 2012. The Onion and its 17 employees will stay in Chicago.

Dicey conditions : The Onion was “kneecapped” by its previous owners, G/O Media, said Leila Brillson, The Onion’s chief marketing officer. G/O Media pigeonholed The Onion as a website rather than as a strong multimedia brand with books, a social media presence and big potential for merchandise, live events, partnerships and more, she said.

Future plans : There are plans to bring back a print edition of The Onion, though it won’t be the weekly it once was. The website will remain free, and Brillson brainstormed ideas such as offering memberships to The Onion and special offers like extra jokes. Brillson, previously head of social media at Bumble and the former social lead at TikTok, is also enthusiastic about The Onion capitalizing on social media.

Fond memories : “When I think about these pastries from Pecking Order Chicago, it feels like being in two places at the same time: the flavors transport me to the Philippines, where I grew up, but it is also distinctly Filipino American, and reminds me of summer afternoons spent snacking on it by the lake,” Pat tells me.

What to get : “While this mother-and-daughter, Filipino-owned business sells familiar Filipino dishes like bibingka (a rice cake dessert) and adobo (chicken or pork marinated in soy sauce and vinegar), my favorites are the pastries that I have not tasted anywhere in the Philippines,” Pat says. “One of these pastries has a thick, slightly sweet and savory crust that envelops longganisa, a sweet pork sausage that Filipinos often eat for breakfast. Other variations of these pastries feature ube (purple yam).

Where to find them : The Logan Square Farmers Market (every Sunday through Oct. 27) and the Andersonville Farmers Market (every Wednesday through Oct. 23). In the winter, they accept orders and catering requests online .

Jacalyn Stoeck is the princess of the day. Flanked by her mother, friend and sister, the 8-year-old will be crowned by the end of her visit to the Pretty Spirit Palace in Mount Greenwood.

In matching hot-pink dresses, the trio of girls are ready to indulge in an afternoon full of pampering, DIY beauty and fun.

Pretty Spirit Palace was created to be a young girl’s dream — or at least the dream of anyone who loves pink and making their own lip gloss and sparkles.

Owner Juanysha Payton moved the boutique — the palace, as Payton calls it — to 3225 W. 111th St. in April. To attract a Mother’s Day crowd, it has been offering Queen & Princess packages for mothers and daughters.

During her visit, Jacalyn is being treated to a free princess makeup session along with other goodies as the monthly winner of the palace’s giveaway. Jacalyn’s 11-year-old sister, Danielle, is along for the ride, as well as their friend, Mona O’Connel, also 11.

The shop is designed to bring children and their parents together in a stress-free environment for grown-ups — a glam squad does all the work.

Together, mothers and daughters — dubbed queens and princesses — can indulge in gel manicures, DIY fashion and accessories customization and DIY beauty product creation. Offerings also include “princess” makeup, “crowned” hairstyles and a boutique store.

While the adults can hang in the waiting room, most stay with their child as they make one of the palace’s staple crafts — perfume, T-shirts and lip gloss. On this day, most mothers watch their daughters get pampered by Payton and her team.

“I’m a little jealous,” said mom Kahlia Kyser as 4-year-old Haley White got sparkles dusted across her face. “I wish I had this growing up.”
