Hi! I’m Shawn Chun

My adventure in coffee began when I first launched my first coffee shop back in the early 2000s. I had to figure out so many things on my own and to make it worse within 2 years of opening two large corporate coffee chains moved in just blocks away from me!

As I saw smaller and even some larger coffee shops in the neighborhood slowly lose customers to these giant coffee chains and slowly close up shop, I knew that I had to start getting creative…or go out of business.

I (like you may be) knew the coffee industry well. I could make the best latte art around and the foam on my caps was the fluffiest you have ever seen. I even had the best state-of-the-art 2 group digital Nuova Simonelli machine money could buy. But I knew that these things alone would not be enough to lure customers away from the name brand established coffee shops.

Eventually, through lots of trial and error as well as perseverance and creativity I did find a way to not only survive but also thrive in the coffee/espresso industry even while those corporate coffee chains stayed put. During those years I learned to adapt and always faced new challenges. It was not always easy, however, in the end, I was the sole survivor independent coffee shop within a 10-mile radius of my location. Just two corporate coffee chains and I were left after that year. All told the corporate coffee chains took down over 15 small independent coffee shops and kiosks and I was the last one standing and thriving.

Along the years I meet others with the same passion for coffee and I quickly learned that it is not only “how good a barista is” that makes a coffee shop successful, but the business side of coffee as well.

When you think of a coffee shop Starbucks or Dunkin most likely come to mind. There are countless of them in the world. Some are small, family-oriented businesses and some are much bigger than that with over 25,000 locations. Starbucks, Dunkin, and Tim Hortons are a few of the larger coffee chains. Then there are the smaller café businesses such as Angie’s Bakery and The Blend On Main. Out of all the coffee brands and shops, the most unrivaled ones always have polite customer service, affordable prices, and a wide variety of menus. If the coffee shop does not meet these requirements, then who would want to go there? 

A big make or break for a coffee shop is the customer service. Kind customer service means putting their needs over your own. Everyone has bad days but it is the employees' job to accommodate the customer's needs. If the staff is rude and unpleasant then no one will want to come back. The workers must know their products, understand problem-solving, and be polite and helpful to their patrons. This does not go unnoticed. It is a great start to a comfortable environment in the coffee shop. 

Many people go to a cafe to work or study. The shop must be a peaceful and relaxed workspace for them to be able to do this.  All the essentials must be included in the café such as comfortable seating, outlets for laptops, and nice music to help them work. The vibe of the coffee shop is what makes someone want to come back. Panera’s café is exemplary of this. They have plenty of singular tables for working but they also don’t exclude large groups of people. Starbucks and Dunkin are usually on top of all this too, but how much do the products cost? 

The coffee shop must be affordable. Your quick stop for coffee and breakfast can quickly add up. The average price for a small coffee is $3. This is without all of the special requests. You can get extra shots of espresso, flavored powder, flavored shots and syrup, cold foam, and many other options. These particular requests can turn your $3 coffee into a $5 coffee. You can also get a different size. Starbucks has four sizes: tall, grande, venti, and trenta. A tall coffee is $2.95 the next biggest size is $3.65. That is without all the add-ins and marked requests. On the contrary, Dunkin is a little cheaper but some may not like the taste as much as Starbucks. Dunkin’s small coffee is $1.59 and the medium is $1.89.  The prices of larger coffee chains don’t vary much from small coffee businesses. The Blend on Main is a family-oriented business in town. They only have two sizes and it’s a $2 difference from each size. If you like the taste of something, then maybe it is worth the extra cost. 

The greatest coffee shops have a wide menu with food choices for everyone. Some people are plant-based and some are dairy or gluten-free. The menu must include options for everyone. Starbucks is better known for its creative coffees and teas. Their refreshers are popular as well. If it is too late in the day for coffee or you are in the mood for something fruity and refreshing then this is a great choice. All of the drinks can be customized to anyone's liking such as dairy-free milk instead of real milk. Starbucks doesn’t have as many food options but they do have some. On the other hand, Dunkin has a large food and vegan menu which is interesting. They serve many different donuts as well as breakfast sandwiches and wraps. New eye-catching options happen frequently with this coffee shop. Small coffee businesses usually have fewer menu options. They are still trendy but a little different than larger coffee chains. They have more “special” menu items. Some shops sell special teas. Some sell ice cream and fruit smoothies. Big or small, the menu is key to a sustainable cafe. 

That covers the three necessities for a coffee shop. But there are so many other things that are helpful to the business. For instance, technology is very popular nowadays. Restaurants and stores have been coordinating technology into their business. Bigger coffee chains have now designed apps to make ordering food easier. Starbucks, Tim Hortons, and Dunkin all have mobile apps. These apps can be used to online order, find the location, and view the menu. It can also be used for rewards. You make an account and each time you make a purchase, you get rewards. This can give rewards such as “Free Beverage” or “Free Breakfast Sandwich.” This is so helpful in the long run because it can save a lot of money. The mobile app for Panera allows you to make a coffee subscription. Once subscribed the first three months are free. When the three months are over it then costs $9 a month. This is worth the unlimited coffee and tea, any flavor. It isn’t a necessity, but it is a benefit. 

In conclusion, every café is different. Some thrive and some are just mediocre. The difference between the two refers back to what was expressed in the beginning. A successful coffee shop must include polite customer service, affordable prices, and a wide variety menu. These three main points are needed for the business to stay stable, but the extra benefits are what differentiate the coffee shops from one another.

CUTIES, I ALREADY MISS YOU A LATTE! I discovered cuties coffee on a viral Instagram post a couple weeks ago and decided to take the hour long drive from my neck of the woods with a friend who I knew would love this place as much as I did! Cuties definitely passed the vibe check and you won't be sorry you visited no matter how busy or crowded the shop may be. Expect to wait in line a little but don't worry because you'll be greeted with a warm friendly face once it is your turn to order. They have pastries and Chick-fil-A biscuits on the weekends you can order for a snack to go along with your coffee. They have a nice coffee menu along with super fun seasonal drinks for Valentines right now. The drinks were up pretty quickly after we ordered for a busy Saturday afternoon. One thing to note that I wish I had known beforehand: if you plan to grab a table, hang out, or order their cute seasonal coffee flights that aren't in to-go cups - you'll need to book a reservation in advance. This was a little bit of a bummer as it was my friend's birthday and we were hoping to order a flight but we just chose a few seasonal drinks instead (also unfortunately makes for less insta/yelp-worthy pics). Overall, cuties was amazing from the drinks to decor to ambience as a whole. I'm already sad it's not closer to me so that I can frequent on the regular. If you're in the Greensburg area be sure to stop in!

I was influenced to try this place by an Instagram influencer who posts literally the best spots to try, so naturally I was curious and dying to try here. The shop is in the cute little town of greensburg near Seton Hill University. It's adorable on the outside and inside. I loved everything about the shop ambiance wise. From the floors to the ceiling, it was cozy, sweet, simple and stylish. The service was fairly decent. I have gone to shops where the ladies are way more outgoing and sweet. I am just naturally in love with humans who radiate kindness immediately and love to chat. The ladies were still nice and just seemed busy and focused which is admirable. The drinks and the cake pops were FANTASTIC. I usually get almond milk and forgot to ask for it but honestly the whole milk was super tasty and a fun change. I've seen pictures of the Iced s'mores macchiato having like a marshmallow and all kinds of fun stuff. The gal did say those are for the flights though. So I will be back to experience the fun flights and more wonderful cozy vibes. Overall, I rate this place high up for a fun coffee shop to try. There's just something so happy about small businesses, in cute towns, with delicious coffee. It's a vibe

This place is a super cute find. The small coffee shop is a vibe, very adorable. There is some seating both inside and outside. I also love that there is parking onsite, although it's a tight squeeze. The coffees are very good and reasonably priced. I LOVED my Samoas latte. I will also add that the people there seemed very nice and my drink was ready fairly quickly.

What a cutie lil spot with delicious coffee! I love the idea of coffee flights, especially when they are as cute as these ones were! You have to make a resy (they are for 45 mins) if you want to get the flight, so make sure you book if you want the flight! If you'd like a standalone coffee though, you can just pop on in! The drinks on this flight were so cute and just as scrumptious. My favorite one, which should surprise no one, was the Irish Cream Latte. It was creamy and the mocha rim really added extra flavor. The one that took me by surprise was the Blue Raspberry Frappe- probably because i'm only used to getting chocolatey/ caramely/ vanilla-y flavors rather than like fruity sweet drinks. It was really subtle and delicious. The matcha was stunning too as was the lucky charm latte. All hit the right spots and kept Jules bouncin off the walls and wanting more. #GOUDapproved

A really nice little coffee shop in the heart of Greensburg. All the drinks we had on our visit were quite tasty. The inside is very small, but inviting. Seating is sparse, a few tables indoors and a couple more outside. We took our drinks to go due to no seats available. Great branding and decor. Will be back!

Stopped by on a late Sunday morning. There was a short line that moved quickly. Our drinks were prepared quickly, and the patrons were so respectable. It is a small and cozy coffee shop, and they utilized the space really well with counter seating and a few chairs. All customers that were seated only sat for maybe 6 minutes (except those with flights, rightfully so) to start their drinks theh headed out. The flights looked amazing. We ordered Ruldoph Cole Brews and they were delicious

Let me first give a disclaimer: I don't want to yuck anyone's yum. I don't want to disparage people's beverage tastes. I embrace change! I am by no means a coffee snob, and I love trying a fun new treat or flavor.

Whatever is happening on the Starbucks menu right now is making me feel like I'm a senior citizen.

Currently, some of the "spring favorites" on the Starbucks app include a Lavender Oatmilk Chill, an Iced Lavender Cream Oatmilk Matcha, Spicy Dragonfruit , and an Iced Hazelnut Oatmilk Shaken Espresso.

And these are just the standard menu offerings. Over on TikTok, Starbucks employees go viral by showing off an endless amount of customizations.

In a recent video, a handsome young barista shows how to make "pink sauce" (to order: venti vanilla bean Frappucino with two scoops of dragonfruit and whipped on top and bottom). Another one of his creations is a "Milky Way Frappucino" (venti caramel crunch Frappucino with extra caramel and mocha drizzle, extra crunch and cookie crumbles, substitute sweet cream).

It's not just 'mocha-choca-venti-chino-lattes' anymore

It's a hacky outdated joke to scoff at people ordering a "mocha-choca-venti-chino latte" as some jab at blue-haired elitists or whatever. (This has always been a somewhat misguided target: I think, generally, the Frappucino stuff is for suburban teenagers; coastal liberal elite coffee snob orders are probably more likely pour-over served black. But I digress.)

But when I see the sheer amount of dairy products and sugar going into these drinks, I feel like a '90s standup comedian. What the heck is going on with these drinks these days ?!?!

I'm no coffee purist, I like mine with half-and-half and Sweet 'N Low. I often drink day-old coffee over ice at home. I enjoy gas station coffee.

I recently was in a Starbucks — which reported slower-than-expected sales this past week — and found myself stammering in confusion at the menu like a boomer, unsure if I was supposed to order with milk and sugar or if those were still self-serve. (The self-serve stations at Starbucks are a pandemic casualty, and probably for the better). After ordering a coffee with milk and Sweet 'N Low, I was informed they no longer carry "the pink packet" and, in fact, haven't in several years (I did actually know this but had forgotten).

In that humiliating moment, I imagined this must've been what it would be like to be a 43-year-old in 1999, learning to order a size "venti" for the first time.

I know very well the hesitant, mildly annoyed speech of those befuddled middle-aged people struggling to place their orders because I worked in a Starbucks as a teenager in 1999, a time when the chain was still new enough that the size names befuddled many.

The rise of complicated, multi-ingredient sweet drinks has coincided with the rise in popularity of the Starbucks app , accelerated by the start of the pandemic in 2020 when many locations couldn't take walk-in orders. Not only are there more options for a customer to add in extra pumps of syrup, drizzle, or whipped cream, but the app also makes it easier for the barista to actually make the drink — they have all the ingredients printed out on a sticker label, exactly how the customer wants it.

Back in my day, we would use a wax pencil to mark a cup with a form of shorthand to signal what the order was, and then the employee who was working the drink station would have to make it. I can tell you that we got a lot of people's drinks wrong!

I tried the newer Starbucks drinks myself

I acknowledge I'm a bit of a crank when I say: The Starbucks menu is out of control. But I don't want to be an uninformed crank. So I went out on a fact-finding mission Friday to my local Starbucks. I ordered the Oleato Golden Foam Iced Shaken Espresso with Toffeenut for myself, a Cinnamon Caramel Cream Nitro Cold brew for my husband — who asked me to get him "anything with real coffee in it" — and a Frozen Mango Dragonfruit Lemonade Refresher for my 7-year-old.

The adult drinks were sweet and creamy, like coffee ice cream. (I should note here that my grande iced drink was 360 calories, which does seem like a dessert treat rather than a morning coffee. It was tasty for a few sips, but my husband and I couldn't finish ours.)

Meanwhile, my son slurped down his fruit slushy and loved it, which sort of confirmed what I had been suspecting: These sweet new additions are for kids, teens, and non-coffee drinkers looking for a little afternoon treat. And hey, that's great — a caramel milkshake is a better teen trend than vaping. But it also reinforced what I already knew: Starbucks makes me feel 1,000 years old.

Former Starbucks CEO Howard Schultz posted a lengthy essay on LinkedIn urging the coffee chain to overhaul its US operations after the company posted disappointing quarterly earnings.

Schultz, who left the company’s board last fall after he became the public face of the company’s resistance to its employees’ unionization drives, wrote on Sunday that Starbucks needs to regain “a maniacal focus on the customer experience, through the eyes of a merchant.”

“The answer does not lie in data, but in the stores.”

Schultz said that its lagging US sales — which sent Starbucks shares tumbling 16% during a single trading session last week — were “the primary reason for the company’s fall from grace.”

In his LinkedIn post, Schultz encouraged Starbucks executives and board members to “spend more time with those who wear the green apron.”

“One of their first actions should be to reinvent the mobile ordering and payment platform — which Starbucks pioneered — to once again make it the uplifting experience it was designed to be,” Schultz wrote.

The 70-year-old former boss, who remains one of the company’s largest shareholders, stepped down from the company’s board of directors last September — six months after handing over the reins of the firm to CEO Laxman Narasimhan.

Shares of Starbucks fell 15% last week after the company reported disappointing quarterly earnings results.

The Brooklyn native, who bought Starbucks when it was just a local Seattle-based coffee bean store and turned it into a chain of European-style coffeehouses, urged the company to redo its “go-to-market strategy” by focusing on “coffee-forward innovation that inspires partners.”

“Through it all, focus on being experiential, not transactional,” Schultz wrote.

Narasimhan was grilled last week by CNBC analyst Jim Cramer during a tense interview in which the chief executive was asked to explain Starbucks’ lackluster quarterly results.

“Is it possible that your coffee is just too darn expensive?” Cramer asked the Starbucks boss during the interview — video of which went viral on social media.

Narasimhan responded that the “occasional US customer” has “clearly cut back on visits to us” due to sky-high levels of inflation.

“We have not been able to communicate to them the value that we provide,” the CEO said.

Narasimhan pledged to put in place an “action plan” to “reach [customers] and communicate to them the value that we are providing.”

Starbucks said economic headwinds in China as well as high inflation in the US have put a dent in the company's bottom line.

After the interview, Cramer told CNBC’s “Squawk Box” that he was “stunned.”

“I am distressed about this situation even knowing Mr. Narasimhan has an action plan,” Cramer said on CNBC.

Shares of Starbucks fell to a two-year low on Wednesday after the company reduced its annual forecasts due to weakened demand in the inflation-hit US as well as a slower-than-anticipated recovery in China.

“We had a tough quarter. We need to do better, and we will. As I look forward, I’m confident we have the right strategy,” Narasimhan told investors on an earnings call last week.

Starbucks cut its sales outlook for the second time this year. It reported last week that its net income fell 15% in the quarter compared to the same period last year.

The company also said that revenue fell 2%.
