Marketing Plan

Balance Sheets : Balance sheets show your assets and liabilities. While balance sheets can include much information, try to simplify them to the key items you need to know about. For instance, if you spend $50,000 on building out your ice cream shop, this will not give you immediate profits. Rather it is an asset that will hopefully help you generate profits for years to come. Likewise, if a bank writes you a check for $50,000, you don’t need to pay it back immediately. Rather, that is a liability you will pay back over time.

Cash Flow Statement : Your cash flow statement will help determine how much money you need to start or grow your business, and make sure you never run out of money. What most entrepreneurs and business owners don’t realize is that you can turn a profit but run out of money and go bankrupt. For example, let’s say a local restaurant owner approached you with a $25,000 contract to provide ice cream for their restaurant. Let’s further assume the contract would cost you $25,000 to fulfill in terms of increased staffing costs and supplies. Well, in most cases, you would have to pay that $25,000 now for employee salaries, equipment, etc. But let’s say the company didn’t pay you for 180 days. During that 180-day period, you could run out of money.

In developing your Income Statement and Balance Sheets be sure to include several of the key costs needed in starting or growing a ice cream shop business:

Also, talk about what role you as the owner will take each year (it may be that in the first year or two you plan in being very hands-on with the intention of hiring a manager at year three for example).

You should also include any marketing strategies you have for years, as well as how many forms of expansion are going to be funded.

In the company structure section, you should provide an overview of yourself the owner (plus any business partners you have).

A sales forecast can be one of the best ways of giving you a benchmark on how your business is doing financially. It also sets out specifically what you think your growing costs, expenses, and sales should be over a given period.

Sale Forecast Essential Figures

As a general rule, $1k a day in sales for a small ice cream shop is a good initial first-year sales to aim for. Everything you need to know about writing an ice cream business plan. What have we learned in this post? Well, despite the fact that most business owners do not write a business plan, let alone update them regularly – writing a business plan is essential.

In my experience, you really need to write two sets of business plans. The first will be designed for people outside of the business – potential investors, lenders, landlords, etc. The second is just for you. Why have two separate plans? Well, whilst yes, there will be a lot of overlapping information in both – a business plan aimed just at you is meant to be a strategic document you look at weekly. It is meant to guide your business decisions. It is meant to show you what is working in your business and what isn’t.

For example, by comparing your forecasted accounts against your current accounts you immediately have a benchmark to see how your business is doing. Likewise, stuck on marketing, or are your planned marketing strategies even working? Having a business plan which details what you plan to do and what you are doing lets you immediately know what to double down on and what to stop marketing-wise.

Write a business plan you will use

I have written a lot of business plans. I have spent days writing some which are then only thrown into a drawer or saved on a computer to never see the light of day again. This is not the purpose of a business plan. It is meant to be your business’s playbook. A guide for your day-to-day decisions. It should be something you look at weekly. It should be something that helps you grow your ice cream business.

Whatever you write – even if it doesn’t have all of the above in it, make sure it is something that YOU can use in YOUR business.

This Entrepreneur Started Selling Ice Cream From Her Bike—Now She Makes Over $250K A Year

Katherine O’Brien followed her ice cream dreams and it's paying off big time.

She found a pink bike with a freezer attached to the front to hold ice cream. After a few months developing the perfect cookie for her homemade ice cream sandwiches —she said the secret is definitely in the cookie —she set out on the Cream Cruiser to sell her treats. The first summer, in 2015, she made $25,000 from selling homemade ice cream sandwiches at a local farmers’ market. The following summer, her revenue more than doubled.

“And the cool thing about a business model like this is it’s simple,” O’Brien said. “It’s not super high risk.”

What started off as a weekend hobby eventually turned into a business that could fully support O’Brien, who has come to be known as the Ice Cream Bike Lady. The Cream Cruiser has catered over 700 events and sold over 160,000 ice cream sandwiches. She has sold $1.6 million in product in total, with only a few employees, two bikes, and one cart.

To get her business off the ground, O’Brien invested less than $10,000. The Cream Cruiser quickly grew a following and expanded into catering weddings and other events. She took a brief detour to move into the wholesale business, but the Covid-19 pandemic brought challenges that helped her refocus primarily on catering and selling ice cream from her bike.

She began documenting her journey on her Instagram account @icecreambikelady , and started coaching clients who wanted to learn how to start their own bike business. “I started sharing my journey and it kind of just grew on its own,” she said.

With so much interest, she put all of her knowledge and experience into Bike Business University , a self-paced course to teach others how to build their own bike business in about four months.

“I truly feel like anybody would be capable of creating something like the Ice Cream Bike business,” she said. Given the relatively low start-up cost compared to other brands, she said it’s a great seasonal business idea.

For $874, Bike Business University gives students a variety of resources like training videos, budgeting, product-development tools, and support from O’Brien.

“It’s been a super fun addition to the business, but also I love seeing everybody’s different brands and stories sort of come to life.”

A community has formed around Bike Business University, where entrepreneurs connect and share their stories through monthly Zoom meetings and private Facebook groups.

Between catering and Bike Business University, O'Brien says she consistently brings in at least $25,000 per month.

But even if you’re not looking to start your own ice cream bike business, O’Brien has some entrepreneurial advice for those looking to start their own business.

“Start before you’re ready,” she said. “Just be okay getting out of your comfort zone and just rolling with the punches and trust yourself enough to know that you’ll figure it out.”

Since that fateful commute to her 9-to-5 job back in 2014, her initial idea has taken on a life of its own, proving that no dream is too small or crazy. Looking ahead, she plans to grow her e-commerce business and add new products that can ship nationwide. She just added gourmet-flavored Freezie Pops to her online store .

“Truly I think it’s the most fun job in the whole entire world,” she said.

Unilever will hang onto its Russian ice cream business despite plans to offload its frozen dessert brands.

The Magnum and Ben & Jerry’s owner is mulling a potential sale or IPO of its ice cream brands, which are worth about €8bn (£6.9bn) in annual revenues. However, Unilever said on Thursday it will not include its Russian ice cream business in the deal as they have been ring-fenced from the rest of the company.

Plans to hang on to its Russian ice cream operations come despite pressure on Unilever to quit the country altogether in the wake of Vladimir Putin’s invasion of Ukraine.

Unilever was labelled as an “international sponsor of war” by the Ukrainian government, which until recently published a list of companies it deemed to be indirectly contributing to the war .

While it still trades there, Unilever has stopped advertising and halted imports and exports from Russia.

Mr Schumacher said last year that remaining in Russia was the “ least bad option ” and that, were it to leave, its operations could end up being seized by the Russian state.

Other major food and drink companies including Mondelez – the owner of Cadbury – and Nestlé have taken a similar stance.

Unilever runs four ice cream factories in Russia, where it owns the company Inmarko. It sells Cornetto and Carte D’Or in the country, as well as a Russian version of Magnum, called Magnat, a brand called Max that resembles Twister, and a Soviet-style ice cream brand called Golden Standard.

Russia has a long history of ice cream production that traces its roots back back to the early days of the Soviet Union.

Soviet politician Anastas Mikoyan spearheaded a boom in ice cream production after encountering the product during a US goodwill trip in the 1930s. 

Mikoyan enacted strict controls that forced producers to adhere to state standards around ingredients and production methods.

There were three main varieties of Soviet ice cream: molochnoye, made with milk; slivochnoye, made with cream; and plombir, which is made with cream and egg yolks. 

Some Russian manufacturers still make ice cream to those specifications, with Golden Standard among them.

Mikoyan was said to have been accused by Stalin of caring more about ice cream than Communism.

We were supposed to get actual dinner, and yet after a long afternoon in the heat, I've convinced my mate that ice cream is a proper allotment of our calories, despite his diet plans. Which is quite alright, as this shop gives a rough estimate right on the menu board of how far he's going to be set back. And yes, sometimes the calories and prices are higher than we'd prefer, but keep in mind, this is /real/ ice cream. I'd make some sarcastic comment about all the imaginary ice cream that I've downed in my life if it wasn't apparent on the first lick what they meant. I'm used to hard ice cream being the norm as most stands offer Perry's. Instead this was soft as a blanket of cream tucking in my taste buds, singing it a lullaby to try to tamp down their excitement over bananas and nilla wafers in my kiddy cone scoop. (I am far from a kid, though this is a perfectly sized scoop at any age without overindulging yourself.) The window girl was very helpful in easing my worries over allergens, as well as allowing my mate to customize his brownie sundae to swap out whipped cream and the cherry for peanuts. They even offer dairy free ice cream so that I don't have to deal with his repercussions later. His sundae came in a cup that can be sealed for later, as he is exercising self restraint here. Considering it's opening weekend, we managed a table and took in the ambiance of the busy street and balloon art of giant ice cream cones. It wasn't too busy for a weekend night, and while I'm not often going to trek out this far to have dessert for dinner, I'm glad somebody out there is keeping it real.

Introducing the world's tastiest ice cream cone

REXBURG — From 2014-2016, when Jeremy Carlson moved to the Czech Republic to serve a full-time Latter-day Saint mission, he found that the easiest part of the culture for him to get used to, hands down, was a little cone-shaped pastry sold along the roadside the locals called trdelnik.

Morning, night, summer, winter. Didn't matter when or where or why, any time was a good time to enjoy a trdelnik, a soft cinnamon-and-sugar covered cylinder usually filled with fruit or custard or sometimes ice cream.

It was the ideal respite for a young missionary settling into a foreign land.

One night, Carlson found himself dreaming about the treat. He wasn't eating it, he was selling it — in America.

When the dream didn't disappear the next morning, he decided when his mission was over he'd see if he could make it come true.

He had no idea it would lead:

  • To not one but two appearances on "Shark Tank."
  • To one of America's fastest-growing dessert businesses.
  • And, not incidentally, it would introduce him to his wife.

When he first returned stateside, after enrolling in college at BYU-Idaho, Carlson talked his aunt into letting him use her kitchen so he could try and replicate the trdelnik recipe. When he got close, but not quite close enough, he returned to the Czech Republic to further perfect the product.

In 2018, satisfied he had the right ingredients, he purchased a large canopy tent along with ovens to grill the pastry dough and opened his version of the Czech roadside trdelnik stands — in Rexburg, Idaho.

He called the business Crispy Cones.

To drum up customers, he messaged a local influencer on Instagram named Kaitlyn Sims. Sims was a public relations major interested in social media. Figuring honing Carlson's brand and imagery would give her experience that would help with her career, she accepted his salary offer of all the cinnamon-covered pastry cones she could eat.

Thanks to the online publicity, sales quadrupled.

The next year, buoyed by the increasing popularity, Carlson replaced the tent with a trailer. The year after that, after transferring to Utah State University to complete his business degree, the COVID-19 pandemic slowed things down. But on the Jeremy-Kaitlyn front, the pace quickened considerably. In December 2020, they were married. "We first became best friends working together," says Carlson, "and then … she married her boss."

With the pandemic behind them and now working the dream together, the couple opened a brick-and-mortar store in Logan. When that proved profitable, they opened another one in Rexburg.

This was far from the first time Americans had been introduced to trdelnik. Over the years, capitalistic-minded importers had given the old world treat names such as chimney cakes and twister cakes, selling it out of food trucks and treating it as a European novelty, sort of like bagpipes or apple strudel.

Jeremy and Kaitlyn Carlson changed the focus. Instead of emphasizing the pastry as something foreign, a novelty you might find at a county fair, they presented it as something Americans could fully understand and appreciate: the world's tastiest ice cream cone.

The traditional soft serve cone was no longer an afterthought, something to prevent the ice cream from succumbing to gravity; it was now the star of the show.

The concept was unique enough to land the couple on "Shark Tank," the popular TV program that allows budding entrepreneurs to see if they can talk billionaire "sharks" into investing in their enterprise.

Their pitch asked for $200,000 in exchange for a 10% interest in Crispy Cones.

One of the sharks, Barbara Corcoran, bit. She agreed to the $200,000 buy-in but asked for a 20% stake, which the Carlsons accepted.

That was in March 2023. Ever since, the whirlwind is yet to subside. Buoyed by the national publicity from the TV show — including a rare second appearance in February of this year — and by Corcoran's expertise at franchising, Crispy Cones keeps growing and expanding.

Already, in addition to the Logan and Rexburg locations, there are two stores open in Arizona, another in California, another in Provo, with more about to open in St. George, Tennessee, Georgia, Florida and Texas. By the end of 2024, the projection is for 15 franchises to be up and running, with 100 franchise units sold.

"We're having fun right now," says Kaitlyn Carlson. "It's almost surreal, it's happened so fast."

"This is not a fad," Jeremy Carlson is quick to point out. "This is a treat that dates back 300 years, a treat that is very, very popular in Europe, traditionally presented to kings and queens."

And to missionaries a long way from home.
